Most of turmeric's healthful properties stem from curcumin, its primary active ingredient. This wonder compound is one of three curcuminoids in the spice (the others being bisdemethoxycurcumin and demethoxycurcumin) and has come under the microscope repeatedly owing to its therapeutic potential.
Curcuminoids, of course, are the vibrant orange pigments of turmeric which belong to a family of polyphenols comprising all bioflavonoids, flavans and flavanols. Though curcuminoids give turmeric its signature hue, they are notoriously poorly absorbed into the bloodstream.
Some estimates suggest that just 1-2% of ingested polyphenols in 95% curcuminoid extract is ever absorbed.
